Banana Spice Lemon Drops

Prep: 15 min – Bake: 10 min

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
6 tablespoons margarine, divided
1 cup packed brown sugar
1 egg
1 large, ripe DOLE® Banana, mashed (about 2/3 cup)
Vegetable cooking spray
2 cups powdered sugar
2 to 3 tablespoons lemon juice

Combine flour, baking soda, cinnamon and cloves in small bowl; set aside.

Beat 4 tablespoons margarine, brown sugar and egg in large bowl until blended. Stir in banana. Add flour mixture; stir until well blended.

Drop dough by rounded teaspoonful onto baking sheets sprayed with vegetable cooking spray, 1-inch apart.


Bake at 375 F., 10 to 12 minutes or until edges are light brown. Remove to wire rack; let cool completely.

Beat remaining margarine, powdered sugar and 2 tablespoons lemon juice in small bowl until smooth, adding additional l emon juice, if needed. Spread frosting over cooled cookies.

Makes 3 dozen cookies
