Fresh Apple Cake

Looks and tastes impressive and makes a great cake for that school bake sale or your workplace colleagues.

3/4 cup egg substitute or 3 eggs
3 cups flour
1 cup oil
2 cups sugar
1 teaspoon nutmeg
2 teaspoons cinnamon
2 teaspoons vanilla
1 teaspoon Arm & Hammer Baking Soda
1/2 teaspoon salt
1 cup pecans or walnuts, finely chopped
3 cups apple, finely chopped

Reserve 1/4 cup flour and toss with apples and nuts. The flour will help suspend them in the cake batter. Beat eggs thoroughly and blend in sugar. Add flour and oil gradually alternating them. Add Baking Soda–spices and vanilla and mix well. Fold in apples and nuts. Bake in a greased and floured 10-inch tube pan at 350 degrees for 1 hour.
