Strawberries Romanoff

1 quart strawberries, washed and hulled
1/4 cup orange juice
1/4 cup Cognac
1/4 cup Cointreau
1/2 teaspoon plus 1/8 teaspoon McCormick Ground Mace, divided
1 cup heavy cream
1/4 cup sugar
1 quart vanilla ice cream

Place strawberries in 2-quart glass or stainless steel bowl. Add orange juice, Cognac, Cointreau, and 1/2 teaspoon mace. Mix well, cover, and refrigerate to marinate overnight.

Place cream, sugar, and remaining 1/8 teaspoon mace in chilled bowl and beat with electric mixer until stiff.

Allow ice cream to soften slightly at room temperature, but do not allow it to melt. Place in mixer bowl and beat with electric mixer. Fold in whipped cream.


Use slotted spoon to remove berries from marinade, reserving marinade. Add berries to cream mixture and stir gently.

Spoon into serving bowls and serve immediately. Spoon reserved marinade over each serving.
