Coconut Washboards

2 cups flour
3/4 teaspoon Calumet Baking Powder
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
3/4 cup butter
1 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
1 1/3 cups (about) Baker’s Angel Flake Coconut

Mix flour with baking powder, spices and salt. Cream butter. Gradually add sugar, beating until light and fluffy. Add egg, vanilla and almond extract. Beat well. Add flour mixture blending well. Stir in coconut. Divide dough into 2 parts. Chill, if necessary, until dough is easily handled.

 

Spread or pat each half into a 10×9-inch rectangle. Cut each strip into 10 pieces. Place about 2 inches apart on ungreased baking sheets. Using a floured fork, gently press ridges into cookies.

 

Bake at 375 F for 8 to 10 minutes, or until golden brown.

Makes about 6 1/2 dozen
