Zucchini Walnut Mini Loaves

These loaves make delicious snacks or a great gift idea.

Prep: 5 min – Cook: 35 min

1 package (10 ounces) Produce Partners® Carrot Cake Mix
1 egg
1/4 cup oil
1 medium zucchini, shredded, about 1 cup
1/2 cup chopped walnuts
Confectioner’s sugar (optional)

1. Preheat oven to 350°F. Grease and flour two 5 1/2×3-inch loaf pans. In medium bowl, combine first 4 ingredients. Mix on low speed 1 minute or stir 50 or 60 strokes. Fold nuts into batter.

2. Pour batter into pans. Bake 35 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely before slicing. Dust top of cake with confectioner’s sugar, if desired.


To make one 8×4-inch loaf, simply bake for 45-50 minutes.
