Thai Fruit Salad

Prep: 15 min – Chill: 1 hr

3 cups chunked DOLE Honeydew Melon
3 cups chunked watermelon
2 tablespoons lime juice
1 tablespoon packed brown sugar
1 tablespoon chopped fresh cilantro or parsley
1/2 teaspoon grated lime peel
1/8 teaspoon salt
2 firm, small DOLE Bananas, peeled
Dry roasted peanuts, optional

Combine honeydew and watermelon in a shallow casserole dish.

Stir together lime juice, brown sugar, cilantro, lime peel and salt. Pour over fruit. Cover; refrigerate 1 hour to blend flavors.

Slice bananas; toss with fruit mixture. Serve fruit topped with peanuts, if desired.
