Tropical Fruit Salad
Almond Dressing (below)
3 bananas, peeled and sliced
2 avocados, peeled, pitted and sliced
2 kiwifruit, peeled and sliced
1 mango, cut lengthwise in half, pitted and cut up
1 papaya, peeled, seeded and sliced
1/4 cup flaked coconut, toasted*
Make Almond Dressing.
Mix remaining ingredients except coconut. Sprinkle with coconut. Serve with dressing.
Almond Dressing:
1/3 cup chopped almonds, toasted**
1/3 cup orange juice
1/3 cup vegetable oil
3 tablespoons packed brown sugar
2 tablespoons light rum or orange juice
1/4 teaspoon salt
1/4 teaspoon paprika

Shake all ingredients in tightly covered container. Refrigerate at least 1 hour.
*To toast coconut, spread evenly on ungreased cookie sheet and bake in 350 F oven 5 to 7 minutes, stirring occasionally, until golden brown.
**To toast nuts, spread evenly in ungreased shallow pan and bake in 350 F oven about 10 minutes, stirring occasionally, until golden brown.
